1 1/4 cups butter, room temp.
3/4 cup packed brown sugar
1/2 cup sugar
1 egg
1 tsp vanilla
1 1/2 cups unsifted flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/8 tsp nutmeg
3 cups uncooked oats
2 cups (12 oz bag) chocolate chunks
1 cup slivered or chopped almonds or favorite nuts

Pre-heat oven to 375 F. Cream the butter and sugars together until fluffy. Add the egg and vanilla, beat until blended. Combine flour, baking soda, salt, cinnamon, and nutmeg in a seperate bowl. Add flour mixture to butter mixture, blend well. Stir in the oats. Carefully add chocolate chunks and nuts. Drop even rounded scoops on a ungreased cookie sheet. Bake 8 to 9 minutes for a chewy cookie, 10 to 11 minutes for a crunchy cookie. Cool cookie for a minute before moving to a wire rack. Store in an air tight container. Makes 5 dozen 2-inch cookies.

I will also put some coconut and pecans in along with some kind of corn flakes, I use frosted flakes. I usually don't get them baked before the cookie dough is gone.

LOL. I like the dough too. Mmmmm...coconut, I'll try that. I'm not sure about the corn flakes though.

Yummy.... Cowboy cookies have always been my favorite with coconut and pecans in them
